SOY BURGERS
Makes about 5 cups of mix.
1 cup soybeans, uncooked
1 bay leaf
¼ cup soy sauce
¼ cup oil
¼ tsp cayenne
¼ tsp chili powder ½ tsp dry mustard
3 cloves garlic, minced
¼ tsp ground cumin
¾ tsp dill weed
¾ tsp ground thymeSoak the soybeans for 24 hours.
Cook (with a bay leaf) till done, about 2 hours. Remove the bay leaf.
Reserve about a half cup of cooked soybeans and chop them lightly. Blend the rest of the soybeans with the rest of the ingredients above. (Use a blender or use a Champion juicer with the blank inserted on the underside.)
Place the blended mixture in a large bowl, and add the chopped soybeans to the blended mix for texture.
Mix the following ingredients well, and then add them to the mix in the bowl.
½ cup dry millet, steamed
¾ cup toasted rolled oats
(Toast them lightly in the oven) ¾ onion, chopped fine
½ grated carrotTo prepare the millet, add it to 1½ cups boiling water and simmer till all the water is absorbed. Maybe 10-15 minutes.
Mix everything well.
2 eggs, beaten
Cheese slicesAdd the beaten egg. (Optional, but it helps the burgers stick together.)
Form the mix into patties and fry in a little oil. After cooking on both sides, add a slice of cheese to the top and cook, covered, till the cheese melts. Serve on a plate or on toast, with lettuce, tomato slices, and ketchup.
