POLENTA CASSEROLE

4 Servings            

2 cups water
1 cup polenta, uncooked
1 cup chopped canned tomatoes

1/2 onion, sautéed
1 small-medium zucchini, sautéed

6 mushrooms, sautéed
1 tsp. salt
1/2 tsp. dried basil
3 cloves garlic, minced
1/2 cup grated cheese

Grease an 8" x 8" shallow baking pan.

In the pan, mix together all the ingredients except the cheese.

Bake 30 minutes at 350 degrees.

Top with cheese and bake 5-10 minutes more, till the cheese is melted.

Serve.
